Uliveti's granola

This is a healthy and tasty granola. The addition of two table spoons of Ancino Verde extra virgin olive oil packs it with good Vitamin E and antioxidants. A great way of starting the day!

Ingredients

300 gr rolled oats

150 gr mixed seeds (e.g. sunflower, pumpkin, sesame, linseed, chia), coarsely chopped

150 gr mixed nuts (e.g. almonds, hazelnuts, walnuts, pecan), coarsely chopped

100 gr dried fruit (e.g. berries, apricots, figs, coconut), copped (coconut could also be in flakes)

2 tb spoons Ancino Verde extra virgin olive oil

2 tb spoons honey

150 ml agave or maple syrup

Heat the oven to 140C.

Put all the dry ingredients (but not the dried fruit) in a large bowl. Poor the agave (or maple) syrup, the honey and extra virgin olive oil in the bowl with the dry ingredients and mix well.

take a baking tray and cover it with baking parchment. Spread the mixture and put it in the oven for 10 minutes. Mix the granola fairly often so that it does not burn and it gets toasted throughout.

After 10 minutes add the dried fruit, mix and bake for another 10 minutes (or until the mixture is well toasted).

Remove from the oven and scrape onto a flat tray to cool.

Store the granola in an airtight tin or other container for up to four weeks.

Serving suggestions: add some milk or Greek yogurt and some freshly chopped fruit in season and finish with a teaspoon of honey or maple syrup.
